Sun Dried




On the long weekend I needed to use up the last of my home grown tomatoes before they over ripened so I decided to make some semi sun dried, or more accurately oven dried. They were seriously simple to do and smelt amazing while in the oven, now I’m thinking of recipe ideas to use them, has any one made pesto with them? Any other ideas? I’ve not really eaten them before.

Your tomatoes look like they did really well! Mine are currently covered in whitefly - I am trying to use neem oil to deal with the problem organically but we'll see.

I know this sounds simple but grilled vegetables (aubergine, courgette, peppers, etc) with sundried tomatoes and some kind of cheese, maybe some rocket on fresh bread and you've got yourself a designer sandwich right there.

I've also had sundried tomato hummus before which is really tasty.

this is my favorite way to eat tomatoes! i sometimes put them over a salad or quinoa too. delicious.

Ooh yum yes definitely do a pesto with them, that is if you have any left and haven't scoffed the lot yet! :)

Ooh you are missing out! Oven dried tomatoes are so intensely delicious. And what lovely images, your tomatoes look so pretty.

These are great on bruschetta, or even tossed through pasta with extra virgin olive oil, fresh basil leaves and feta with toasted pine nuts sprinkled on top.

Could you tell me how you cooked them? Do you store them in oil to make them last? They look delicious :)
ps I went to Dinosaur Designs when in Sydney the other day. I thought of you and your collection. I bought a tiny vase and already want another piece to go with it :)

I have been thinking of sun dried tomatoes constantly for the past few days. Thank you for your post... gives me inspiration and motivation to do it myself. Wishing we had better tomatoes in Washington this time of year.

I put them in pasta or risotto or just in salad, it's really to use them... happy sunday...
